Gluten-Free Low-Carb Quiche With Almond Flour Crust

This Gluten-Free Low-Carb Quiche features a savory filling of spiced ground pork and spinach baked in a low-carb almond flour crust. The filling combines eggs and coconut milk, flavored with Italian seasoning, fennel seed, and a mix of spices. The quiche is baked until the eggs set firm but creamy. It's a nutrient-dense dish suitable for those avoiding gluten or limiting carbohydrates.

Description

The Gluten-Free Low-Carb Quiche with Almond Flour Crust uses a homemade or store-bought low-carb pie crust as a base. The filling is ground pork seasoned with parsley, Italian herbs, black and red pepper, fennel seed, paprika, salt, and onion powder, providing a complex savory profile. The pork is cooked fully and drained before mixing with eggs, light coconut milk, salt, and fresh spinach.

The mixture is poured into the chilled crust and baked at 375℉ initially for 20 minutes, then covered loosely with foil and baked an additional 18-20 minutes until the eggs fully set and the top is firm. The result is a quiche with a firm yet creamy custard texture balanced by the savory sausage and leafy spinach.

This quiche is well-suited for a low-carb, gluten-free diet and can be served warm or at room temperature for breakfast, brunch, or a light dinner.

Ingredients

Servings
  • 1/2 pound ground pork grass-fed
  • 1/2 teaspoon parsley dried
  • 1/2 teaspoon Italian seasoning
  • 1/4 plus 1/8 teaspoon black pepper ground
  • 1/4 teaspoon red pepper flakes
  • 1/8 teaspoon fennel seed
  • 1/8 teaspoon paprika
  • 1/2 teaspoon salt sea salt
  • 1/4 teaspoon onion powder
  • 5 egg large
  • 1/2 cup coconut milk light, canned
  • 1/4 teaspoon salt
  • 1 cup spinach roughly chopped and tightly packed
  • 1 pie crust at room temperature, low-carb

Instructions

  1. Preheat oven to 375℉.
  2. Mix the pork with all the spices, up to (and including) the onion powder. Heat a large skillet on medium heat and cook the pork until it is no longer pink, breaking it up into pieces and draining excess fat.
  3. In a large bowl whisk together the eggs, coconut milk, and salt until well mixed. Stir in the spinach and cooked sausage until well mixed.
  4. Pour into the cooled pie crust and place in the oven. Bake for 20 minutes. Then, loosely cover the top with tinfoil and bake for another 18-20 minutes, until the eggs are set.
  5. Let cool at room temperature for 10 minutes. Slice and DEVOUR!
