Gluten Free Meatloaf
Description
The Gluten Free Meatloaf recipe blends ground turkey with gluten free bread cubes that have been toasted to hold texture, along with sautéed onions, celery, and garlic for aromatic depth. Poultry seasoning and chicken bouillon contribute savory complexity, while club soda is added to keep the mixture light and tender rather than dense.
Baking at 350°F in a lightly greased loaf pan allows the meatloaf to cook evenly until hot and bubbly, typically between 1 hour and 1 hour 15 minutes. Post-baking rest time of 15 to 30 minutes lets juices settle, resulting in a moist slice that holds together well.
This recipe makes use of gluten free bread cubes, which can be substituted with preferred gluten free bread. The method avoids over-mixing and packing tightly to maintain a light texture. It serves as a comforting main course suitable for family meals.
To keep the meatloaf tender, avoid compacting the mixture in the pan. Resting it before slicing helps retain moisture. Toasting the bread cubes prevents sogginess and adds structural integrity.
Ingredients
- 1 1/2 pound ground turkey
- 1 onion chopped, about 2 cups
- 2/3 cup celery chopped
- 3 ounces gluten free bread about 2 cups, diced, cubes
- 2 egg lightly beaten
- 2 Tablespoons olive oil
- 2 cloves garlic minced
- 2 teaspoons poultry seasoning
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 teaspoons chicken bouillon
- 1/2 cup club soda plain
Instructions
- Preheat oven to 350 degrees F.
- Put bread cubes on a baking sheet and toast in oven until golden and crisp, about 10 minutes.
- In a saute pan, heat oil. Add chopped onion and celery and cook 3-4 minutes, until translucent. Add garlic and cook and additional minute, just until fragrant. Remove from heat.
- In a large bowl, combine ground turkey, toasted bread cubes, eggs, sauteed vegetables, spices, and club soda. (I use my hands).
- Fill a lightly greased 9"x6" loaf pan with meatloaf mixture. Do not pack. Bake at 350 degrees F. for 1 hour to 1 hour and 15 minutes. Meatloaf should be hot and bubbly. Let stand 15 minutes for juices to set.
Notes
- Toast gluten free bread cubes before mixing to maintain texture and prevent sogginess.
- Use your preferred gluten free bread if bread cubes are unavailable.
- Mix the ingredients gently and avoid packing the mixture tightly in the pan to keep the meatloaf light.
- Allow the meatloaf to rest 15 to 30 minutes after baking to let the juices settle for moist slices.
