Description
Gluten-Free Nutella Cookies feature a dough made from Nutella, peanut butter, brown sugar, and egg, creating a rich and nutty base. Roasted nuts are crushed and folded into the batter, adding texture and crunchy bits throughout the cookie. The cookies are formed into small mounds and lightly flattened before baking at 350°F for 8 to 10 minutes.
Light baking results in cookies that appear soft when pulled from the oven but firm up slightly as they cool. The balance of Nutella and peanut butter flavors provides a sweet and nut-forward taste, while the nuts add contrast in texture. These cookies can be served as a snack or dessert.
Ingredients
- 1 egg
- 1/2 cup Nutella
- 1/2 cup brown sugar
- 1/2 cup peanut butter (chunky or creamy)
- 1/2 cup nut walnuts, pecans, peanuts also would work, roasted
Instructions
- Place nuts in a plastic storage bag and crush into small pieces with a meat tenderizer.
- In a bowl, whisk together the egg and brown sugar. Mix in peanut butter and Nutella.
- Fold in nuts.
- Scoop small pieces of dough onto a lined baking sheet. Using a fork, press on the tops lightly to flatten out.
- Bake cookies at 350°F for 8-10 minutes. They will still appear soft when you remove them from the oven, but that's perfectly normal. Allow them to set at room temperature for a couple minutes to harden. Serve and enjoy!
