Gluten Free Peach Cobbler with Almond Flour

Almond flour compliments peaches perfectly for a naturally gluten-free peach cobbler. This super easy to make peach dessert is delicious with a scoop of ice cream.

Ingredients

Filling

  • 6 peaches sliced
  • ¼ cup sugar
  • 2 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract

Topping

  • 2 cups almond flour
  • ½ cup sugar plus two tablespoons
  • 2 teaspoon baking powder gluten-free
  • ½ teaspoon salt
  • cup butter cold and crumbled or cubed
  • 2 eggs large
  • ¼ cup almond milk or any dairy or plant based milk

Instructions

Filling

  1. Preheat the oven to 400°
  2. Combine peaches, sugar, lemon juice, cornstarch and vanilla in a 9 inch square baking pan and spread evenly in the pan.

Topping

  1. Whisk together the almond flour, sugar, baking powder, and salt.
  2. Cut in the butter using a pastry blender or rubbing with your fingers until the mixture in crumbly
  3. Stir in the eggs until combined
  4. Add milk a little at a time, stirring between additions, until the mixture becomes a sticky dough.
  5. Spread the batter evenly over the filling and sprinkle the top with two tablespoons of sugar
  6. Bake 45 minutes or until the filling is bubbling and the topping is golden.
