Gluten Free Strawberry Banana Bread

You would never know that this Strawberry Banana Bread Recipe is gluten free! The texture is perfect & it's super moist. It truly is THE BEST banana bread!

Ingredients

  • 1 cup granulated sugar
  • ½ cup butter room temperature, unsalted
  • 2 egg
  • 2 banana mashed, ripe
  • 1 tbsp milk
  • 2 cups gluten-free flour blend
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups strawberries sliced

Instructions

  1. Preheat the oven to 350°F.
  2. Cream sugar and butter together with an electric hand mixer in a large bowl or using a stand mixer.
  3. Add the eggs, mashed bananas and milk, mix until well combined.
  4. In a small bowl, combine the gluten free flour, ground cinnamon, baking powder, baking soda and salt.
  5. Add the dry ingredients to the wet ingredients and combine well.
  6. Hand mix in the sliced strawberries.
  7. Reserve a few of the strawberries to place on top of the bread batter in the pan for appearance, if you'd like.
  8. Pour the bread batter into an oiled 9" x 5" loaf pan.
  9. Bake for 50-60 minutes, or until a toothpick inserted in the middle comes out clean.
  10. Allow to cool for at least 30 minutes-1 hour before removing from the pan and slicing.

Notes

  • Traditional flour can be substituted for the gluten free flour if you do not want to make the bread gluten free.
  • Blueberries or chocolate chips can be used in place of the sliced strawberries.
  • Dried, frozen or fresh sliced strawberries can be used in this recipe.
