Description

  • 2 cups all-purpose gluten free flour
  • 1/4 cup sugar
  • 4 Tbsp baking powder
  • 1/4 tsp salt
  • 1/3 cup vegetable oil
  • 2 egg
  • 1 tsp vanilla extract
  • 1 3/4 cup milk

Instructions

  1. In a medium size bowl, mix together the dry ingredients: flour, sugar and baking powder.
  2. Then whisk in the eggs, oil, vanilla and milk. Stir until all the ingredients are just combined and be careful not to over mix.
  3. Preheat a waffle iron and spray it with non-stick cooking spray.
  4. Pour in 2/3-3/4 cup of batter evenly into the waffle iron and cook until golden brown.
  5. Remove the waffle from the hot iron, place on a pan and continue to follow this process until all of the batter is used (ours made approximately 3 large whole waffles).
  6. Top with your favorite toppings and enjoy!

Notes

  • This recipe scales well for larger quantities by doubling or tripling the ingredients.
  • Store leftover waffles in an airtight container in the refrigerator for up to 5 to 7 days.
  • You can freeze leftover waffles in freezer-safe bags or containers to preserve freshness.
