Gluten Free Waffle Recipe
Description
The Gluten Free Waffle Recipe uses a combination of wet ingredients—egg, coconut sugar, vanilla extract, almond milk, and salt—and dry ingredients—gluten-free flour blend, cinnamon, and baking powder—to create a thick waffle batter. The batter is allowed to rest for ten minutes to improve texture. Cooking occurs in a waffle maker where a mixture of coconut sugar and cinnamon is sprinkled on top before closing the lid, which infuses the waffles with a lightly sweet and spiced crust.
The resulting waffles have a pleasant cinnamon aroma and a moderately sweet flavor without overwhelming sugariness. Using almond milk provides moisture and helps keep the waffles tender yet structured thanks to the flour blend and baking powder. The coconut sugar contributes a caramel-like sweetness that complements the cinnamon.
This recipe suits those avoiding gluten, delivering waffles with familiar texture and flavor elements akin to traditional waffle recipes. It is best enjoyed fresh but can also be frozen for later use.
Salt is added to the wet ingredients here to ensure it dissolves evenly, aiding in balanced seasoning throughout the batter.
Ingredients
WET INGREDIENTS
- 2 egg large
- ½ cup coconut sugar
- 1 tsp vanilla I used alcohol-free
- 1 cup almond milk unsweetened
- ¼ tsp kosher salt or a pinch
DRY INGREDIENTS
- 1 ¾ cup gluten-free flour blend I used King Arthur's
- 1 tsp ground cinnamon
- 1 ½ tsp baking powder
TOPPING
- ¼ cup coconut sugar
- 1 tsp cinnamon
Instructions
- Preheat your waffle maker. Have two mixing bowls ready.
PREPARE WET INGREDIENTS:
- In one of the mixing bowls, add the eggs. Whisk to break the yolks.
- Next, add the coconut sugar, vanilla extract, almond milk, and kosher salt. Mix until dark homogenized liquid forms, and set aside.
PREPARE DRY INGREDIENTS:
- In the other mixing bowl, add the gluten-free flour, cinnamon, and baking powder.
- Whisk the dry ingredients until well combined.
MIX THE WAFFLE BATTER:
- Add the dry ingredients in with the wet a little at a time. Mix and fold until a thick batter forms.
- Let the batter rest for 10 minutes.
COOK WAFFLES:
- Dollop the batter into the waffle maker and sprinkle the coconut and cinnamon mixture on top of the batter right before closing the lid.
- Cook according to your waffle maker's time frame.
- Enjoy while hot or freeze for later.
Notes
- Adding salt to the wet ingredients helps it dissolve fully and distribute evenly in the batter without yeast.
- The batter rests for 10 minutes before cooking to improve the waffle texture.
- Waffles can be enjoyed immediately or frozen for later reheating.
