Gnocchi with Brown Butter, Crispy Pancetta, and Sage

Gnocchi with Brown Butter, Crispy Pancetta, and Sage is a pasta dish where pillowy gnocchi are coated in a nutty brown butter sauce enhanced with crisp sage leaves and savory pancetta. Parmesan cheese adds a salty finish, balancing the richness with sharp, creamy notes. The dish combines tender textures with crispy elements for a satisfying experience.

Description

This recipe starts by cooking gnocchi in salted boiling water until they float, indicating doneness. Meanwhile, pancetta or bacon is cooked until crispy, providing a salty, smoky contrast. Brown butter is prepared by melting salted butter until golden and fragrant, after which fresh sage leaves are added and allowed to crisp in the butter. The drained gnocchi are then tossed in this aromatic butter sauce, combined with the pancetta, and finished with grated Parmesan cheese. Salt and black pepper are adjusted to taste.

The resulting dish offers a combination of soft gnocchi, crispy pork, and textured sage leaves, all coated in a rich, slightly nutty butter sauce. Parmesan adds an additional savory element, creating a balanced and comforting plate. Garnishing with extra crispy sage leaves and shaved Parmesan enhances the presentation and flavor.

This dish can be served as a main or a hearty side and works well accompanied by a simple green salad or steamed vegetables.

Ingredients

  • 16 - 24 ounces gnocchi depending on how much sauce you want
  • 1/2 cup butter salted
  • 8 -12 sage fresh leaves
  • 1/2 lb. pancetta cooked until crispy and chopped, or bacon
  • 1/2 cup Parmesan Cheese plus more for garnish. I love to use shaved parmesan
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat a large pot of water on high until it begins to boil. Generously salt the water. Cook gnocchi according to package instructions.
  2. While gnocchi is cooking, cook pancetta or bacon until crispy.
  3. In a large skillet, melt the butter over medium heat. After several minutes, add the sage leaves. Cook until the sage is crispy and the butter starts to turn a golden brown color -- about 3-4 minutes.
  4. Drain the gnocchi and add it to the skillet. Toss to coat with butter sauce. Add pancetta (or bacon).
  5. Add parmesan cheese.
  6. Toss and season with salt and pepper to taste.
  7. Serve with crispy sage leaves and shaved parmesan cheese as garnish.
