Ingredients
- sweet potato gnocchi 25-30 pieces
- 3/4 pound Italian sausage
- 14 1/2 ounce diced tomatoes canned
- 1 teaspoon Italian seasoning
- 1/4 cup heavy cream optional - see notes
- salt to taste
- black pepper to taste
Instructions
- In a large skillet cook Italian sausage over medium high heat break up the sausage with a mixing spoon and cook until the meat is no longer pink. Drain any excess oil.
- Mix in the diced tomatoes and Italian seasoning. Gently fold in gnocchi and let ingredients heat for another 5 minutes. Serve immediately.
Notes
- If the diced tomatoes are very liquid, add 1/4 cup of heavy cream to soften the tomato flavor and create a pink sauce.
