  • sweet potato gnocchi 25-30 pieces
  • 3/4 pound Italian sausage
  • 14 1/2 ounce diced tomatoes canned
  • 1 teaspoon Italian seasoning
  • 1/4 cup heavy cream optional - see notes
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large skillet cook Italian sausage over medium high heat break up the sausage with a mixing spoon and cook until the meat is no longer pink. Drain any excess oil.
  2. Mix in the diced tomatoes and Italian seasoning. Gently fold in gnocchi and let ingredients heat for another 5 minutes. Serve immediately.

Notes

  • If the diced tomatoes are very liquid, add 1/4 cup of heavy cream to soften the tomato flavor and create a pink sauce.
