Goat Cheese Crostini Recipe
Description
The preparation begins by slicing a crusty baguette into half-inch rounds and lightly brushing them on both sides with extra virgin olive oil and a sprinkle of salt. These slices are baked in a preheated oven at 350°F until crisp and golden. Simultaneously, raw walnuts are toasted on a separate baking sheet until fragrant and lightly browned, careful to avoid burning. Once cooled, the toasted baguette slices are spread with softened goat cheese, topped with toasted walnut pieces, and finished with a drizzle of honey to balance flavors. The final result is an appetizer with contrasting textures: the crunchy toast, creamy tangy goat cheese, nutty walnuts, and sweet honey.
This crostini makes an elegant appetizer or snack, complementing wine or simple salads. Serving warm enhances the cheese’s softness and walnut aroma.
Ingredients
- 1 lb baguette crusty
- 3 tablespoons extra virgin olive oil
- 1 cup walnuts raw pieces
- 5 ounces goat cheese softened to room temperature
- 5 tbsp honey use a little more or less based on your preference of sweetness, for drizzling
Instructions
- Preheat an oven to 350 degrees Fahrenheit (175°C).
- Slice the baguette into 1/2 inch slices and arrange on a baking sheet. Use a pastry brush to lightly coat both sides of each piece with olive oil. Sprinkle the tops with salt.
- Arrange the walnuts in a single layer on a second baking sheet.
- Once the oven is pre-heated, place the baguette slices and walnuts in the oven on separate racks.
- Allow the walnuts to toast for 5-7 minutes, checking every minute or so, until golden brown and fragrant. Be careful not to burn them!
- Remove the baguette slices after 15-20 minutes, or when crisped and golden. If your oven has hot spots you may want to rotate the baguette pan halfway through the baking time.
- Allow the crostinis to rest until cool to the touch. Spread a thin layer of goat cheese over the top of each crostini, then top with walnuts and a drizzle of honey. Serve warm.
