Description

The Goat Cheese Pesto is prepared by finely dicing shallot and combining it with fresh basil leaves, garlic cloves, pine nuts, green goddess seasoning, sea salt, and a measured amount of olive oil. An immersion blender is used to create a finely blended pesto base after about 2-3 minutes.

Soft goat cheese with honey and grated Parmesan cheese are then blended in further to produce a creamy, spreadable sauce with depth from the cheese and a slight sweetness from the honey in the goat cheese. The herbal and nutty flavors are balanced with the seasoning and salt.

This pesto complements crackers, pasta, grilled meats, or vegetables, making it versatile for different meals and appetizing additions. Storing in an airtight container refrigerated for up to 5 days or freezing for up to 3 months keeps it fresh. Doubling the batch before freezing halves future prep work.

  • 4 oz basil stems removed
  • 1 shallot
  • 2 cloves garlic
  • cup pine nuts
  • 1 tbsp Green Goddess seasoning
  • 2 tsp salt sea salt
  • cup olive oil + 2 Tbsp
  • 4 oz goat cheese with honey
  • ¼ cup Parmesan Cheese grated

Instructions

  1. First, finely dice the shallot.
  2. Then, in an immersion blender cup, add basil, shallot, peeled garlic cloves, pine nuts, seasoning, salt, and olive oil together. Use the immersion blender to blend for 2-3 minutes until a pesto-like texture is created. Be patient as the blender works through the basil, nuts, and onion.
  3. Once blended, add the crumble the goat cheese and parmesan cheese into the cup.
  4. Blend again for 30-60 until cheese is well incorporated.
  5. Serve with crackers, on pasta, on grilled meats or veggies, with bread. Whatever you choose, it'll be delicious!

Notes

  • Store the goat cheese pesto in an airtight container in the refrigerator for up to 5 days to maintain freshness.
  • Freeze the pesto in suitable containers for up to 3 months to extend shelf life and simplify future use.
