Description
The Gochujang Aioli combines mayonnaise and gochujang, a Korean chili paste, with rice vinegar to lighten and balance the creaminess. The sauce's texture is smooth and thick, with a gentle spice that can be adjusted by adding more gochujang or optional chili flakes. The preparation involves simply mixing the ingredients thoroughly, making it quick to assemble. This aioli can add a savory kick to sandwiches, burgers, or roasted vegetables.
Ingredients
- ¼ Cup mayonnaise I like to use Japanese Kewpie Mayonnaise which is a little more savoury than regular, but your typical mayo will do too. (You can add a bit of sugar and chicken stock powder to it for homemade Kewpie.)
- 1 teaspoon gochujang sauce Korean
- 1 teaspoon rice vinegar Or to taste- it helps balance the creaminess of the sauce. Substitute: white wine vinegar or apple cider vinegar.
- 1 Pinch gochugaru flakes Optional, if you want to make it spicier.
Instructions
- Stir the Gochujang into the mayonnaise, being sure to scrape every last bit of the spoon.
- Stir the vinegar into the Gochujang Mayo. If using, mix in the minced garlic.
Notes
- Adjust the spice level by varying the amount of gochujang or adding gochugaru flakes for more heat.
- Rice vinegar can be substituted with white wine vinegar or apple cider vinegar to suit your taste.
- Mix thoroughly to ensure all ingredients are well combined for a consistent flavor.
