Gochujang Buttered Noodles
Description
Gochujang Buttered Noodles bring together cooked pasta with a sauce made by sautéing minced garlic in butter, then stirring in Korean gochujang paste, optional chili flakes, and honey. Adding reserved noodle cooking water loosens the sauce for even coating. Fresh lime juice and chopped cilantro finish the dish with acidity and herbal notes.
The resulting dish features tender noodles enveloped in a creamy, slightly spicy sauce with a balanced sweetness from honey and bright citrus from lime juice. The garlic adds aromatic depth while the gochujang contributes fermented chili flavor and mild heat.
This preparation works well as a stand-alone main or paired with simple proteins or vegetables. The sauce’s consistency can be adjusted with noodle water to prevent dryness while maintaining flavor intensity. Finishing touches like extra cilantro bring freshness.
The notes recommend not overcooking the noodles, as they will absorb sauce and risk drying out. Adjustments to spice, sweetness, and savoriness allow customization of the final taste according to preference.
Ingredients
- 11 ounces noodles approx. 300 grams or long pasta
- 2 tablespoons butter
- 5 cloves garlic minced
- 2 tablespoons gochujang paste
- 1 teaspoon gochugaru Korean chili flakes, optional
- 2 tablespoons honey
- 1 tablespoon lime juice freshly squeezed
- cilantro finely chopped
Instructions
- Get all the necessary ingredients ready.
- Heat a large pot of salted water until it boils. Cook the noodles according to the package instructions. Reserve some of the noodles cooking water before draining, as you'll need it in the sauce later.
- In a pan, heat butter over medium heat. Sauté the minced garlic until fragrant.
- Add gochujang paste, gochugaru (if using), and honey to the pan. Stir for a couple of seconds. Add a splash of reserved cooking water and stir to form a sauce.
- Taste the sauce and adjust it to suit your preferences.
- Add the cooked noodles and toss to coat in the sauce evenly. If the noodles seem dry, you can add a bit more noodle-cooking water.
- Turn off the heat. Add freshly squeezed lime juice and chopped cilantro. Toss to combine.
- Top with preferred toppings. Enjoy!
Notes
- Cook noodles until tender but not overdone, as they will absorb sauce and risk drying out.
- Adjust the spiciness, sweetness, and savoriness of the sauce to your preferred taste.
