Description
This Goetta recipe starts by simmering steel-cut oats in beef broth and water with salt, bay leaves, and marjoram until the oats are soft and liquid absorbed. After removing bay leaves, the mixture includes ground beef, pork, onions, garlic, and a blend of spices like ginger, mace, white and black pepper, coriander, and cloves. The combined mixture cooks further until thickened.
The cooked mixture is then pressed into greased loaf pans to set overnight. Firmed loaves are sliced thickly and fried in a dry non-stick pan until golden and crispy on both sides, preventing them from falling apart. The texture features a dense, moist interior with flavorful crispy edges.
Goetta serves well as a breakfast meat alternative or side dish. It stores well refrigerated or frozen, with clear guidance on thawing to maintain slice integrity before frying.
Ingredients
- 2 1/2 cups steel-cut oats aka pinhead oats
- 4 cups beef broth
- 4 cups water
- 3 teaspoons salt sea salt
- 3 bay leaf
- 1 1/2 teaspoons marjoram dried
- 1 pound ground beef
- 1 pound ground pork
- 1 yellow onion finely chopped, large
- 5 garlic cloves, minced
- 1 teaspoon ground ginger
- 1 teaspoon mace ground
- 1/2 teaspoon black pepper freshly ground
- 1/2 teaspoon ground white pepper freshly ground
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cloves ground
Instructions
- Place the broth, oats, water, salt, bay leaves and marjoram in a large pot. Bring it to a boil then reduce the heat to low, cover, and gently simmer for 90 minutes, stirring occasionally, until it's soft and the liquid is absorbed. Discard the bay leaves. Add the meat, onions, garlic and spices. Return to a boil then reduce to low, cover and cook for another hour, stirring occasionally. If the liquid has not all been absorbed, remove the lid and continue to cook uncovered, stirring occasionally until the mixture has thickened.Pour and press the mixture into 2 (9x5) greased loaf pans and let cool completely. Cover with plastic wrap and refrigerate overnight.
- To serve, cut into thick slices, at least 1/2 inch (otherwise they'll fall apart; I cut them inside the pan, if you invert the whole thing it will be very messy), and fry them in batches in a non-stick pan over medium-high heat without any oil. Notes
- Goetta freezes well for up to 2-3 months when wrapped tightly; thaw fully before slicing and frying.
- Alternatively, pre-slice frozen loaf and separate slices with wax paper for easy portioning.
