Ingredients
- 4 cups cauliflower florets
- 1 chickpeas drained and rinsed, canned
- 3 tablespoons olive oil
- 1 teaspoon Turmeric
- ½ teaspoon ground ginger
- ½ teaspoon garlic powder
- salt kosher salt
- black pepper kosher salt
- couscous or your favorite grain, for serving, cooked
- cilantro for topping, fresh
hummus dressing
- ¼ cup hummus or your favorite variety, plain
- ½ lemon juiced
- 1 teaspoon honey
- 1 teaspoon ginger grated, fresh
- salt kosher salt
- black pepper kosher salt
- 2 to 3 tablespoons water cold
Instructions
- Preheat the oven to 425 degrees F.
- Toss the cauliflower and chickpeas with the olive oil on a baking sheet. Season all over with the turmeric, ginger and garlic powder. Sprinkle on a big pinch of salt and pepper and toss well.
- Roast until golden and crispy, tossing once or twice during cook time, for about 25 to 30 minutes.
- While the cauliflower roasts, cook the couscous (or other grain) if needed and make the hummus dressing.
- Whisk together the hummus, lemon juice, honey, ginger and a pinch of salt and pepper until smooth. Whisk in the water until the mixture smooths and thins out.
- To assemble, scoop the couscous into bowls. Top with the cauliflower and chickpeas. Drizzle with the dressing. Top with cilantro and enjoy!
