  • 4 cups cauliflower florets
  • 1 chickpeas drained and rinsed, canned
  • 3 tablespoons olive oil
  • 1 teaspoon Turmeric
  • ½ teaspoon ground ginger
  • ½ teaspoon garlic powder
  • salt kosher salt
  • black pepper kosher salt
  • couscous or your favorite grain, for serving, cooked
  • cilantro for topping, fresh

hummus dressing

  • ¼ cup hummus or your favorite variety, plain
  • ½ lemon juiced
  • 1 teaspoon honey
  • 1 teaspoon ginger grated, fresh
  • salt kosher salt
  • black pepper kosher salt
  • 2 to 3 tablespoons water cold

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Toss the cauliflower and chickpeas with the olive oil on a baking sheet. Season all over with the turmeric, ginger and garlic powder. Sprinkle on a big pinch of salt and pepper and toss well.
  3. Roast until golden and crispy, tossing once or twice during cook time, for about 25 to 30 minutes.
  4. While the cauliflower roasts, cook the couscous (or other grain) if needed and make the hummus dressing.
  5. Whisk together the hummus, lemon juice, honey, ginger and a pinch of salt and pepper until smooth. Whisk in the water until the mixture smooths and thins out.
  6. To assemble, scoop the couscous into bowls. Top with the cauliflower and chickpeas. Drizzle with the dressing. Top with cilantro and enjoy!
