Golden Milk Baked Oatmeal

If you love turmeric lattes, you will love this Golden Milk Baked Oatmeal. With warm turmeric and cinnamon, cardamom and ginger spices, coconut milk, rolled oats and flaked coconut, lightly sweetened with maple syrup. Baked oatmeal is perfect for weekend breakfast or meal prep! Gluten free and dairy free. Can be made vegan with a flax seed egg!

Golden Milk

  • 1.5 cups coconut milk from a carton is fine
  • 1 teaspoon Turmeric ground
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon black pepper
  • 3 tablespoons coconut oil melted

Oatmeal

  • 2 egg room temperature, large
  • 1/3 cup pure maple syrup
  • 1.5 teaspoons vanilla extract
  • 2 cups gluten-free rolled oats
  • 1/3 cup coconut flaked
  • 1 teaspoon baking powder

Instructions

  1. Preheat oven to 375ºF and grease 8x8 baking dish (or similar size) with oil (or line with parchment paper).
  2. In a small saucepan over low-medium heat whisk together coconut milk, spices and coconut oil. Whisk continuously for 3-4 minutes, until milk is warm; set aside.
  3. In a large bowl whisk together eggs, maple syrup and vanilla extract. Gently stir in golden milk until combined.
  4. Add in rolled oats, flaked coconut, baking powder and salt. Stir until combined and transfer to greased baking dish.
  5. Bake for 35-40 minutes or, until top is golden and middle is set. You can serve immediately bowl style, or wait about 20 minutes to serve as squares.
  6. Serve with your favorite toppings; add some berries, some yogurt, a little extra maple syrup or honey. Enjoy!

Notes

  • If you'd like to omit the coconut flakes, replace with 1/4 additional rolled oats.
  • Because this recipe calls for coconut oil, make sure your eggs are room temperature, or set them in a bowl of warm water for 15 minutes before beginning the recipe. You can also replace the coconut milk with avocado oil if you'd like.
  • To make vegan, use 2 flaxseed eggs and use 1.5 teaspoons baking powder.
