Description

The pizza dough is brushed with olive oil before being topped evenly with crumbled gorgonzola and mozzarella cheeses, which provide a creamy yet tangy cheese base. A fruit jam diluted with water creates a pourable syrup that is drizzled over the cheese, offering a contrasting sweetness. Fresh rosemary torn into pieces adds an aromatic layer to the flavor profile.

Baked at 500 degrees Fahrenheit for 6 to 7 minutes, the crust becomes crisp and slightly browned while the cheeses melt into a bubbly, cohesive topping.   • 1 pizza dough thin crust, 11", not pre-cooked
  • 1 tablespoon olive oil
  • 2 ounces gorgonzola cheese
  • 5 ounces mozzarella cheese Just over half of one standard-size fresh mozzarella ball
  • 2 tablespoons fruit jam Fig or blackberry jam recommended, or jelly
  • rosemary 2 sprigs; fresh; removed from stem

Instructions

  1. Preheat oven to 500ºF.
  2. Brush pizza dough with olive oil. 
  3. Use a fork to crumble apart both cheeses.
  4. Spread both cheeses on pizza dough in an even layer.
  5. In a small bowl, mix jam with ½ TB of water, and stir until fig jam dissolves into a syrup. Add more water if it's still too thick to pour. 
  6. Drizzle jam mixture over pizza.
  7. Tear rosemary into smaller pieces.  Sprinkle over pizza.
  8. Bake 6-7 minutes until crust has browned and cheese has melted.  
  9. Cut into 8 slices.  Allow pizza to cool slightly before serving.

Notes

  • The recipe is designed for a 12" thin crust pizza; adjust cheese and jam amounts proportionally for larger sizes.
