Description
This recipe involves mixing finely grated, room-temperature Gouda cheese with sour cream and kosher salt until smooth. The chilled mixture is then spread onto the flat side of a pecan and topped with another nut, with the textured sides facing outward. This creates bite-sized, savory pecan snacks that highlight creamy cheese flavor and nutty crunch.
Optionally, the assembled pecans can be dusted with smoked paprika for a subtle smoky undertone that complements the cheese and pecans. Chilling the spread thickens it, making it easier to handle and enhancing the melding of flavors. These pecans make for a straightforward yet distinct snack or party finger food.
Using full-fat sour cream is recommended to ensure creaminess and proper texture of the cheese spread.
Ingredients
- 30 pecans raw, whole
- 1/4 cup gouda cheese , finely grated and room temperature
- 2 tablespoons sour cream
- 1/4 teaspoon kosher salt
Instructions
- Either by hand or in a stand mixer, mix the gouda cheese, sour cream and Kosher salt together well. Chill for 15-30 minutes or until a spreadable consistency.
- Spread onto the flat side of a pecan and top with another pecan, bumpy sides facing out. You'll use a scant teaspoon on each pecan.
- Chill until ready to serve. I dusted mine with smoked paprika, which is optional. If adding one of the sauce variations, drizzle right before serving.
