Gougeres with Cheese and Scallions

Gougeres with cheese and scallions are light, airy French savory pastries made from choux dough enriched with shredded white and medium cheddar cheeses plus minced scallions. Baking develops a golden, crisp exterior and hollow interior that is tender and cheesy. These small, oval-shaped puffs are baked until puffed and golden, making them a flavorful snack or appetizer with a delicate balance of cheesy richness and fresh scallion brightness.

Description

This recipe for Gougeres with Cheese and Scallions begins by boiling water, butter, and salt, then incorporating flour to form a thick paste typical of choux pastry. Once the mixture thickens and pulls away from the pan, it is combined with eggs and mixed until sticky and smooth. Shredded white cheddar, medium cheddar, and minced scallions are folded in to add rich flavor and a mild onion note.

Small ovals of the dough are dropped onto parchment-lined baking sheets with space between each to allow puffing. Baking at 375°F results in golden, puffed pastries with crisp outer shells and soft, cheesy interiors. The scallions provide subtle freshness and contrast to the cheeses’ savory depth, while the choux dough gives the gougeres a delicate, airy texture.

These gougeres are ideal served warm as appetizers or snacks. Their lightness pairs well with drinks or as accompaniments to soups or salads. Serving immediately after baking preserves their crispness and tender crumb.
