Gram’s Calzone with Sausage and Cheese
Description
This recipe starts with sautéing seasoned Italian sausage along with optional fennel seeds and paprika until browned. The cooked sausage is combined with raw egg and a large portion of shredded mozzarella cheese to form the filling.
The pizza dough is rolled out into a rectangle, topped with the meat and cheese mixture, then rolled up lengthwise to encase the filling. The calzone is brushed with olive oil and sprinkled with additional mozzarella before baking at 400°F for 15-20 minutes until golden and cooked through.
The baked calzone is allowed to rest for a few minutes before slicing, which helps firm up the filling for easier serving. It offers a satisfying mix of warm sausage and melted cheese wrapped in a crisp, golden crust.
Gram’s variation includes placing the filling between two dough layers in a pan as an alternative. Leftovers keep well refrigerated for several days and reheat in the oven or microwave. The calzone can also be frozen when wrapped tightly and reheated from frozen or thawed.
Ingredients
- 1 pound pizza dough store bought
- 2-3 Italian sausage remove the casing, approximately 2 cups chopped, large size
- ½-1 tablespoon fennel seed optional
- 1-2 pinches salt
- 1-2 dashes paprika or dash or two of hot pepper flakes
- 1 large egg
- 2 cups mozzarella cheese shredded, firm, divided
*Best to shred it yourself and not use the packaged stuff.

- 1-2 tablespoon olive oil
Instructions
- Preheat oven to 400F° (200C°) degrees.
- In a medium frying pan sauté the sausage, fennel (if using), salt and paprika until brown, drain off the fat and let cool in a clean bowl.
- When cool add to the meat mixture, the raw egg and mozzarella cheese (1¾ cups/200 grams).
- Roll the pizza dough to a rectangle (9x10" / 24x26 cm) and place on a lightly greased or parchment paper lined cookie sheet, sprinkle the top of the dough with the sausage cheese mixture. Roll up lengthwise, brush the top with a little olive oil and sprinkle with the remaining shredded mozzarella.
- Bake for approximately 15-20 minutes or until browned. Let sit 2- 3 minutes then slice and serve. Enjoy!
Notes
- This calzone can be assembled by layering filling between two dough sheets in an 8-inch square pan for a pan-style version.
- Store leftovers in an airtight container in the refrigerator for up to 3–4 days; reheat in oven or microwave.
- To freeze, cool completely, wrap tightly in plastic and place in a freezer bag; keeps up to 3 months.
- Reheat from frozen or thawed state in microwave or oven until warmed through.
