Grandma's Cauliflower Cheese is a whole head of cauliflower gently boiled until tender, then baked in a dish with cream of mushroom soup and sharp cheddar cheese. The recipe relies on simple pantry ingredients but results in a creamy, cheesy vegetable side with a soft texture and baked cheese topping.

Description

This classic cauliflower cheese begins by removing leaves and trimming the stalk so the cauliflower can sit flat and intact. It is boiled in salted water until tender but still holding structure. Then it is carefully transferred upright into a baking dish seasoned with salt and pepper.

The entire cauliflower head is covered evenly with cream of mushroom soup and topped generously with grated sharp cheddar cheese. Baking at 350 degrees Fahrenheit for 20 to 30 minutes melts the cheese and heats the cauliflower through. The result is a creamy, cheesy dish showcasing tender cauliflower with a bubbly, flavorful cheese crust.

  • 1 head cauliflower
  • 1 can cream of mushroom soup 10.5 oz.
  • 2 cups cheddar cheese I like sharp, grated
  • salt
  • black pepper

Instructions

  1. Remove green leaves and a part of the stem so the cauliflower will still stay together and sit flat when upright. Place cauliflower upside down (so it doesn't float so much) into large pot and cover with cold water and about 1 tablespoon salt.
  2. Bring to boil and simmer 30-40 minutes or until the cauliflower stems are tender, but before the cauliflower starts to fall apart. Remove from heat and carefully remove from pot using a large slotted spoon.
  3. Place right side up into baking dish. Sprinkle with salt and pepper.
  4. Slather the cream of mushroom soup over the entire head of cauliflower evenly. Top with cheese* and bake at 350 for 20-30 minutes or until hot and bubbly.*If you want to make this ahead, cover and refrigerate before you bake. On the day you are ready to serve, remove from fridge and bake at 350 for 30-40 minutes or until hot and bubbly.
