Granola Bites

Granola Bites are no-bake snack balls combining oats, ground flaxseed, crispy rice cereal, peanut butter, sweetener, vanilla, and mix-ins like chocolate chips or dried fruit. They offer a chewily crunchy texture and a balanced sweet and nutty flavor. These portable bites are convenient for quick energy and can be stored refrigerated or frozen.

Description

This recipe brings together dry ingredients such as oats, flaxseed, and crispy rice cereal with peanut butter, honey, and vanilla extract to form a sticky dough. Chocolate chips, dried cherries, nuts, or coconut are added for flavor and texture variety.

The mixture is scooped into bite-sized balls and stored in an airtight container, which keeps them fresh in the refrigerator for up to two weeks or can be frozen for longer storage. The bites have a dense, chewy consistency with the occasional crunch from the cereal and nuts.

Granola Bites make a quick snack or lunchbox addition that requires no baking. They are easily customized by swapping nut butters or add-ins according to preference or dietary needs.
