Ingredients
- 1 pint grape tomatoes halved
- 1 tablespoon olive oil
- 1 teaspoon garlic minced
- 1 tablespoon fresh parsley chopped
- salt and pepper
- ½ cup ricotta cheese
- 1 whole wheat baguette

Instructions
- In a medium bowl, combine halved grape tomatoes with olive oil, garlic, fresh parsley, and salt and pepper to taste. Mix well and set to the side.
- Slice baguette in ¼-inch thick pieces. Toast until golden brown.
- Spread ricotta on each baguette and top with grape tomatoes. Serve and enjoy!
Notes
- Make the tomatoes ahead of time for even easier entertaining.
