Ingredients

  • 1/2 french baguette sliced into 1/2-inch slices
  • 1 Tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 1/2 cup ricotta cheese
  • 1-1/2 cups Mezzetta Roasted Red Peppers chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup chopped Italian parsley or basil

Instructions

  1. Preheat oven to 400 Degrees F.
  2. Brush baguette slices with olive oil and place on baking sheet. Bake for approximately 5 minutes or until the edges are golden brown. Sprinkle with garlic powder, salt and pepper.
  3. Spread a spoonful of ricotta cheese over each baguette slice.
  4. Top each crostini with a spoonful of chopped Mezzetta Roasted Red Peppers.
  5. Sprinkle a few crumbles of feta cheese and chopped fresh Italian parsley or basil on top of each crostini.
  6. Serve the Roasted Red Pepper Ricotta Crostini immediately.
