Soft and mellow baked potatoes with, tomatoes, onions, peppers.

Ingredients
- 700 grams potatoes
- 200 grams or 1 medium-sized tomato
- 150 grams or 1 small green bell pepper
- 120 grams onion or 1⁄2 onion
- 1 tablespoon dried oregano
- 50 ml olive oil
- kosher salt
- pepper
- a small baking dish

Instructions
- Preheat oven to 220°C / 428°F.
- Cut all vegetables into squared bite-sized pieces. Mix with remaining ingredients.
- Transfer to baking dish. Half cover with water.
- Bake for approx. 1 hour flipping the veggies every 10-15 so everything gets cooked evenly.
