Greek Beef Meatballs
Description
Greek Beef Meatballs incorporate lean ground beef mixed with minced garlic, fresh oregano, dill, finely grated red onion, and zucchini, plus salt and pepper to season. Ground oats act as a binder and add texture. The ingredients are combined thoroughly and shaped into 1 ½-inch meatballs, then baked at a high temperature to achieve a browned exterior while keeping the inside juicy.
The combination of fresh herbs and grated vegetables adds brightness and moisture to the meatballs, distinguishing them from simple beef meatballs. The suggested serving includes wrapping them gyro-style with tomatoes, lettuce, and tzatziki sauce or enjoying them simply for a fast, nutritious meal.
The oats should be ground finely in a food processor or blender before mixing to integrate smoothly. Baking ensures even cooking and minimal mess compared to frying.
Ingredients
- 1 pound ground beef 93 percent lean
- 3 teaspoons garlic minced
- 4 tablespoons old fashioned oats see note 1, finely ground
- 2 tablespoons oregano fresh, finely chopped
- 3 tablespoons baby dill fresh, finely chopped

- ½ teaspoon black pepper or to taste
- ½ red onion grated, medium
- ¼ cup zucchini finely grated
- 2 teaspoons extra virgin olive oil
- tzatziki sauce optional, for serving
- cucumber optional, chopped, for serving
- tomato optional, chopped, for serving
Instructions

- In a large bowl combine all ingredients (except for olive oil, tzatziki sauce, cucumbers and tomatoes) and mix well. Shape into 1 1/2 inch balls and place in prepared skillet or baking dish.
- Bake for 20 minutes or until browned and cooked through the center. Serve meatballs gyro-style wrapped in a pita with tomatoes, lettuce, and tzatziki sauce, or serve meatballs alone for a grab-n-go meal.
Notes

- These meatballs can be served wrapped in pita with traditional gyro toppings or enjoyed on their own.
