  • 1 green cabbage about 6-8 cups shredded, small-medium, shredded
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup black olive finely chopped
  • 1/4 cup green olive finely chopped
  • 6 green onion chopped thin
  • 1/2 cup feta cheese crumbled
  • 1/3 cup dill chopped, fresh
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp oregano dried

Instructions

  1. To a large bowl add the shredded cabbage and sprinkle over the salt. Use your hands to massage the cabbage with the salt for a few minutes - this helps to just slightly soften the cabbage.
  2. To the cabbage add all of the remaining ingredients (pepper, olives, feta, dill, olive oil, red wine vinegar and dried oregano) and toss well. Serve and enjoy!

Notes

  • Massaging the cabbage with salt slightly softens its texture while retaining crispness.
  • This salad pairs well with grilled meats like Greek Chicken Souvlaki.
