Ingredients
- 8 oz chicken grilled or baked and diced
- 1 ½ cup greens mix
- 1 cup cauliflower rice
- ½ tbsp capers
- ¼ cup canned grilled red/piquillo peppers drained and diced
- ¼ cup feta
- 2 beets sliced into thin rounds, and then into half-circles
- lemons to garnish
For the dressing:
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp champagne vinegar
- 1 tbsp oregano
- 1 tbsp garlic powder
- ½ tbsp basil
