Greek Chickpea Salad

This Greek Chickpea Salad combines garbanzo beans with fresh cucumber, cherry tomatoes, kalamata olives, red onion, feta cheese, and dill. Tossed with olive oil, red wine vinegar, oregano, salt, and pepper, it delivers a bright, savory flavor and a mix of crunchy and creamy textures. It’s a refreshing, substantial salad that can be eaten immediately or after chilling to deepen flavors.

Description

The Greek Chickpea Salad brings together rinsed canned chickpeas, crisp cucumber coins, halved cherry tomatoes, pitted kalamata olives, thinly sliced red onion, crumbled feta cheese, and fresh dill. The dressing of extra virgin olive oil, red wine vinegar, dried oregano, kosher salt, freshly ground black pepper, and optional sugar coats the ingredients evenly and adds tang and seasoning.

With contrasting textures of firm chickpeas and juicy tomatoes paired with creamy, salty feta and aromatic herbs, this salad offers a balanced and enticing flavor profile. The combination of fresh vegetables and bold olives complements the Mediterranean flavors, while the vinegar and olive oil unite the components with acidity and richness.

This salad suits as a side dish, light lunch, or part of a mezze spread. It can be served immediately or chilled overnight, allowing the flavors to meld for a deeper taste. The recipe encourages gentle tossing to keep the textures intact and ensures a fresh and vibrant dish.
