Greek Green Beans-Fasolakia Lathera
Description
This recipe for Fasolakia Lathera gently stews green beans with onions, tomatoes, olive oil, and fresh parsley, sometimes including sliced potatoes for added substance. The slow cooking process allows the beans to soften and the tomato sauce to concentrate, resulting in a dish with a harmonious balance of tender vegetables and bright, fresh tomato flavor.
The olive oil and tomato provide richness, while a touch of sugar balances acidity. The final texture is soft and saucy, with the beans fully cooked but intact. It is ideal served warm or at room temperature accompanied by crusty bread and crumbled feta cheese, echoing traditional Greek fare.
Simple seasoning with salt and pepper highlights the natural flavors without overpowering. The dish stores well refrigerated for up to three days, making it convenient for leftovers or meal prep.
Ingredients
- ⅓ cup olive oil
- 1 onion chopped
- 1 pound green beans
- 1 potato medium, sliced 1/4 inch thickness, cut in half, optional
