  • 2.5 lbs potato yellow, Yukon gold, see notes below
  • 2 cups chicken broth (or vegetable broth)
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 garlic minced, cloves
  • 1 tablespoon oregano dried
  • ½ tablespoon paprika
  • 1 tablespoon salt

Instructions

  1. Preheat oven to 400°F.
  2. Peel potatoes and cut into thick wedges or cubes.
  3. Place potatoes in a roasting pan with all the other ingredients. Toss well to coat potatoes.
  4. Cover pan with foil and roast covered for 40 minutes.
  5. Remove from heat and toss potatoes and continue roasting covered for another 25 minutes or until potatoes are fork tender and most of the liquid has been absorbed/evaporated. You will be left with mainly oil in the pan. Note: actual covered roasting time will vary depending on cut sizes but once they are fork tender they can be roasted uncovered.
  6. Remove foil and continue roasting another 15 minutes or until potatoes browned to desired doneness.
  7. Place onto serving dish and drizzle with remaining liquid. (Optional)
