Ingredients
- ½ pound ground beef lean
- ½ pound lamb or pork, ground
- ⅓ cup panko bread crumbs
- 2 tablespoons milk
- ¼ cup red onion finely diced
- 2 cloves garlic minced
- ½ teaspoon oregano dried
- ½ teaspoon cumin
- 1 teaspoon lemon zest
- 3 tablespoons mint chopped, fresh
- 2 tablespoons parsley chopped, fresh
- ½ teaspoon salt
- 1 egg

Instructions
- Preheat oven to 425°F. Line a pan with foil and place a rack on top of the foil.
- Combine milk and panko bread crumbs. Let sit 5 minutes.
- Add remaining ingredients and mix until combined. Divide mixture into 20 meatballs.
- Roll and place on prepared pan. Bake 20-22 minutes or until browned and meatballs are cooked through.
- Serve with garnishes as desired.

- Ground beef can be used alone instead of lamb if preferred.
