Ingredients

  • ½ pound ground beef lean
  • ½ pound lamb or pork, ground
  • cup panko bread crumbs
  • 2 tablespoons milk
  • ¼ cup red onion finely diced
  • 2 cloves garlic minced
  • ½ teaspoon oregano dried
  • ½ teaspoon cumin
  • 1 teaspoon lemon zest
  • 3 tablespoons mint chopped, fresh
  • 2 tablespoons parsley chopped, fresh
  • ½ teaspoon salt
  • 1 egg
  • garnish as desired see notes

Instructions

  1. Preheat oven to 425°F. Line a pan with foil and place a rack on top of the foil.
  2. Combine milk and panko bread crumbs. Let sit 5 minutes.
  3. Add remaining ingredients and mix until combined. Divide mixture into 20 meatballs.
  4. Roll and place on prepared pan. Bake 20-22 minutes or until browned and meatballs are cooked through.
  5. Serve with garnishes as desired.

Notes

  • Ground beef can be used alone instead of lamb if preferred.
  • Ensure meatballs reach an internal temperature of 165°F for proper doneness.
