Salad

  • 16 ounces orzo
  • ½ cup kalamata olives sliced
  • 1 plash olive brine from the jar
  • 1 whole English cucumber chopped
  • 1 pint cherry tomato sliced
  • 1 whole bell pepper chopped, orange
  • ½ cup feta cheese crumbled
  • cup onion red, chopped

Dressing

  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • cup olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon oregano dried
  • ½ teaspoon kosher salt coarse

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Once it reaches a rolling boil, add the orzo and stir. Boil for about 10 minutes. Don't overcook. You want the texture to still be al dente.
  3. Drain the orzo and run under cold water to stop the cooking and cool the pasta.
  4. In a large mixing bowl, combine the cooked orzo with the remaining salad ingredients. Mix to combine.
  5. In a separate, small bowl, combine all of the dressing ingredients and whisk together.
  6. Drizzle the dressing over the salad and mix until it is fully coated. Serve cold.
