Greek Pasta Salad
Description
This Greek Pasta Salad begins by cooking pasta to al dente and cooling it under cold water to stop cooking and rinse away starch, which helps keep the salad from becoming sticky. The dressing combines red wine vinegar, fresh lemon juice, olive oil, garlic powder, oregano, and salt, providing bright acidity and herbal notes. Kalamata olives with some of their brine are mixed into the dressing to deepen flavor.
Chopped red onion, cucumber, cherry tomatoes, and diced orange bell pepper are added, contributing crunch and freshness. The mixture is tossed thoroughly, and just before serving, cubed feta cheese is folded in to maintain its texture. The result is a colorful, textured salad that balances acidity, salty cheese, and fresh vegetables.
