Greek Pasta Salad Recipe
Description
Cooked pasta is rinsed with cold water and mixed with crisp, colorful vegetables and briny olives for contrast. The dressing's lemon juice and olive oil base highlights the fresh oregano and garlic, brightening the salad and tying the flavors together simply.
This salad offers a balance of tender pasta and crunchy vegetables, with a citrusy and herbaceous note. Feta cheese added on top before serving provides saltiness and richness. It works well as a side dish or a light meal during warmer weather.
If fresh oregano is unavailable, dried oregano can be substituted for a similar flavor. Serve shortly after dressing to preserve the freshness of greens and vegetable textures.
Ingredients
- 2 cups rotini pasta wheat or gluten-free
- 1 cup cherry tomato halved
- 1 English cucumber cut in one-inch pieces, long
- 1 red bell pepper seeded, cored, cut into one-inch pieces
- ½ red onion chopped
- ½ cup kalamata olives pitted
- ¼ cup extra-virgin olive oil
- 2 tablespoon lemon juice
- 1 garlic minced, clove
- 3 tablespoon oregano chopped, fresh
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Cook the pasta according to package directions, until just au dent
- Drain pasta and rinse with cold water
- Combine tomatoes, cucumbers, peppers, onion and olives with pasta in a large bowl
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt and pepper
- Pour the dressing over the pasta & vegetables and gently toss to combine
- Sprinkle feta cheese over top and serve immediately
Notes
- Dried oregano can substitute fresh oregano; use about 2 teaspoons when fresh is unavailable.
