Greek Potato Salad-The Ultimate Potato Salad

This Greek Potato Salad features boiled potatoes tossed with olive oil, lemon juice or vinegar, chopped onions, and dried oregano to create a bright, herby side dish. The warm potatoes absorb the dressing for a flavorful and hearty salad with typical Mediterranean flavors. It’s a versatile dish suitable for serving as a refreshing, savory complement to grilled meats or as part of a meze spread.

Description

The recipe involves boiling 2 pounds of potatoes until tender, then peeling and cutting them to preferred sizes. While still warm, the potatoes are dressed with a combination of olive oil and lemon juice or vinegar, which melds into the potato flesh to impart a tangy richness. Finely chopped onion adds crunch and sharpness, while dried oregano rubbed between the fingers releases its aroma, infusing the salad with herbaceous notes. Salt is added to taste to enhance the overall balance.

The texture combines soft potatoes with the crisp onion and the slightly oily, tangy coating of dressing. The simple method and ingredients highlight the fresh flavors and make it a suitable side dish for many meals, especially summer barbecues or Mediterranean-inspired menus. Serving while the potatoes are still warm helps the flavors meld and provides a comforting satisfaction.

  • 2 pounds potato 1 kg
  • 1/3-1/2 cup olive oil
  • 1/2 onion small, chopped
  • 1-2 tablespoons oregano
