Greek Potatoes
Description
The recipe uses Yukon gold potatoes cut into wedges then tossed thoroughly in a mixture of olive oil, fresh lemon juice, chicken broth, garlic powder, oregano, salt, and black pepper. Garlic powder is preferred to avoid burning at the high roasting temperature.
Baked at 400 degrees Fahrenheit on a non-stick baking sheet, the potatoes are roasted in a single layer for about 50-55 minutes total with a toss halfway through to promote even cooking. The result is tender potatoes with a slightly juicy and lemon-infused texture rather than a crunchy exterior.
These potatoes work well alongside grilled meats or as part of a Mediterranean-style meal where the lemon and oregano flavor complement other dishes.
The recipe notes that these potatoes are not meant to be crispy but creamy and lemony. For those wanting crunchier roasted potatoes, alternative recipes should be consulted.
Ingredients
- 2 1/2 lbs. potato Yukon gold variety
- 1/2 cup olive oil
- 1/3 cup lemon juice (fresh squeezed)
- 1/3 cup chicken broth
- 1 teaspoon garlic powder
- 2 teaspoons oregano dried
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Heat the oven to 400 degrees. Lightly spray a large baking sheet with non-stick cooking spray.
- Start by cutting potatoes into wedges. This can be done by cutting the potatoes into half lengthwise and then into wedges.
- In a bowl, stir together olive oil, freshly squeezed lemon juice, chicken broth, garlic powder, oregano, salt, and pepper. I suggest using garlic powder instead of garlic as the garlic can burn when it is roasted at that high temperature.
- Toss the potatoes with the lemon olive oil mixture until completely coated.
- Spread out the potatoes onto the baking sheet so they are in a single layer. Bake for 25 minutes and then carefully open the oven and using a spatula, toss the potatoes. Cook for 25-30 minutes longer.
- Remove from the oven and check to ensure the potatoes are cooked through. Season with more salt and pepper as needed.
Notes
- Using garlic powder instead of fresh garlic prevents burning during high-heat roasting.
- The potatoes result in a creamy interior with flavorful lemon infusion rather than a crispy texture.
- For a crunchier roasted potato, other recipes may be more suitable.
