Description
This salad features quinoa cooked properly after rinsing and soaking to achieve a light, fluffy texture. The cooked quinoa is cooled and combined gently with finely chopped cucumbers, halved cherry tomatoes, sliced kalamata olives, and red onion for crunch and briny contrast. Crumbled feta cheese is added at the end for a creamy, salty element typical of Greek cuisine.
The dressing mixes lemon juice, olive oil, minced garlic, stone ground mustard, lemon zest, and chopped fresh parsley, imparting a vibrant citrus and herbal flavor that complements both the quinoa and vegetables. Tossed together just before serving, the salad maintains a fresh, light, and balanced taste.

Ingredients
For the Greek Quinoa Salad
- ¾ cup quinoa uncooked
- 1 cup red onion finely chopped
- 2 cups cucumber peeled and chopped
- 2 cups cherry tomato halved
- ¾ cup kalamata olives sliced, pitted
- ½ cup feta cheese crumbled
- salt to taste
For the Dressing:
- ¼ cup lemon juice 1 lemon, fresh
- 2 tablespoons olive oil
- lemon zest of 1
- 2 cloves garlic minced
- 1 tablespoon parsley chopped, fresh
- 1 teaspoon mustard stone ground
Instructions
To Prepare the Dressing:
- Whisk all dressing ingredients together in a bowl or cup and set aside.
To Prepare the Quinoa Salad:
- Cook the quinoa by following instructions on the back of the package (be sure to rinse and soak the quinoa first for light and fluffy results!)
- While the quinoa is cooking, prepare the rest of the salad ingredients by doing all your chopping and adding everything except for the feta cheese to a large bowl.
- Once the quinoa is cooked and has cooled, add it to the bowl with the other salad ingredients and fold together gently.
- Pour the dressing over everything and again gently fold the ingredients together.
- Add the feta cheese on top and serve either hot or cold!
