Greek Rainbow Vegetable Salad
Description
This salad combines diced medium vine tomatoes, peeled large cucumber, sliced red onion, and colorful red and yellow bell peppers to create varied textures and sweet, tangy flavors. Crumbled feta provides creamy saltiness, while kalamata olives add a briny bite. The simple dressing of olive oil, red wine vinegar, honey, salt, and pepper ties the ingredients together, with a balance of acidity and light sweetness.
The salad is assembled by layering ingredients in a specific order and pouring the dressing on just before serving. Allowing it to sit for about 30 minutes helps the flavors meld. It's a vibrant side dish that complements grilled meats, seafood, or can be enjoyed on its own.
Ingredients
- 4 tomato medium, on the vine
- 1 cucumber peeled, large

- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon honey
- salt I use 1/4 teaspoon of each, Kosher, to taste
- black pepper I use 1/4 teaspoon of each, Kosher, to taste
Instructions
- Chop all the vegetables into 1/2 inch cubes.
- Chop the olives.
- Crumble the feta cheese.
- Mix the olive oil, red wine vinegar, honey, salt and pepper together in a small bowl.
- Don't worry about it separating, we are going to pour it over the salad immediately.
- Layer in the following order: red onions, cucumbers, yellow bell pepper, red bell pepper, tomatoes, feta cheese and olives.
- Pour the dressing over the salad. Let sit for about half an hour if you can.
