Description

This salad combines diced medium vine tomatoes, peeled large cucumber, sliced red onion, and colorful red and yellow bell peppers to create varied textures and sweet, tangy flavors. Crumbled feta provides creamy saltiness, while kalamata olives add a briny bite. The simple dressing of olive oil, red wine vinegar, honey, salt, and pepper ties the ingredients together, with a balance of acidity and light sweetness.

  • 4 tomato medium, on the vine
  • 1 cucumber peeled, large
  • 1/2 red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 4 ounces feta cheese (my favorite is Bulgarian Feta, but any kind will do)
  • 3 ounces kalamata olives
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon honey
  • salt I use 1/4 teaspoon of each, Kosher, to taste
  • black pepper I use 1/4 teaspoon of each, Kosher, to taste

Instructions

  1. Chop all the vegetables into 1/2 inch cubes.
  2. Chop the olives.
  3. Crumble the feta cheese.
  4. Mix the olive oil, red wine vinegar, honey, salt and pepper together in a small bowl.
  5. Don't worry about it separating, we are going to pour it over the salad immediately.
  6. Layer in the following order: red onions, cucumbers, yellow bell pepper, red bell pepper, tomatoes, feta cheese and olives.
  7. Pour the dressing over the salad. Let sit for about half an hour if you can.
