Greek Rice

Greek Rice is a fragrant dish made with long grain white rice sautéed with minced onion and garlic, cooked in chicken broth with Greek seasoning, then finished with fresh lemon zest, lemon juice, and parsley. This results in fluffy, seasoned rice with bright citrus notes and herbal freshness. It's a versatile side dish it pairs well with many meals.

Description

The recipe begins by heating olive oil and lightly browning the rice along with minced onion and garlic, which adds a toasted flavor and softens the aromatics. Chicken broth and Greek seasoning are then added, and the mixture is brought to a boil before simmering, allowing the rice to absorb flavors and cook evenly.

After cooking and resting covered, the fluffy rice is fluffed and brightened by the addition of freshly grated lemon zest and lemon juice, which contribute brightness and a subtle tang. Minced parsley adds a fresh herbal finish and color.

This dish is served hot and complements a wide range of Greek or Mediterranean dishes, enhancing meals with its citrus-herbal profile.

Notes suggest the recipe can be halved for fewer servings and fresh or dried dill can be stirred in to vary the flavor.

Ingredients

Servings
  • 1 teaspoon olive oil
  • 2 cups long grain white rice
  • ½ medium onion minced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 tablespoon Greek seasoning
  • 1 lemon
  • 2 tablespoons parsley minced

Instructions

  1. Heat the oil in a large sauce pan over medium heat.
  2. Once hot, add the rice, onion, and garlic and cook, stirring often, until the rice is lightly golden at the tips and the onions have softened.
  3. Add the chicken broth and Greek seasoning to the pot and stir to combine. Bring to a boil, reduce to a simmer, cover, and cook for 15 minutes over medium low heat.
  4. Turn off the heat and let the pan set, covered, for 10 minutes.
  5. Remove the lid from the pan and fluff rice with a fork.
  6. Use a microplane grater to zest the lemon and add to the rice. Cut the lemon in half and squeeze the lemon juice into the rice. Add the parsley and stir.
  7. Serve hot.

Notes

  • The recipe can be easily halved for fewer servings without altering preparation methods.
  • For added herbal flavor, fresh or dried dill can be mixed in with the parsley after cooking.
