- 1/2 cup cucumber diced
- 1/2 cup chopped green bell pepper
- 1/2 cup kalamata olives pitted
- 1/2 cup cubed feta cheese
Dressing
- 1/4 cup extra virgin olive oil
- 1/8 cup red wine vinegar
- 1 Tbsp lemon juice
- 1 Tbsp honey
- 1 tsp oregano dried
- 1 tsp Dijon mustard
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Combine salad ingredients in a large bowl and toss to combine well.
- Prepare dressing by adding dressing ingredients to a small mixing bowl and whisking them together. Alternatively, add dressing ingredients to a jar with an well-fitting lid and shake until fully combined.
