Greek Spinach Rice (Spanakorizo)

Greek Spinach Rice, or Spanakorizo, is a simple one-pot dish combining fresh spinach with diced onions, dill, and long-grain white rice cooked together. Tomato paste and lemon juice add gentle acidity and color, creating a flavorful yet light dish. The spinach wilts into the rice, which is simmered until tender and infused with aromatic herbs. This dish serves as a versatile side or light vegetarian meal.

Description

Greek Spinach Rice (Spanakorizo) begins by gently cooking diced onion in olive oil until softened but not browned. Fresh spinach is then added with dill and cooked until wilted and any excess moisture evaporates. Uncooked rice, boiling water, and tomato paste are stirred in and brought to a boil, then covered and simmered until the rice absorbs the liquid and cooks through.

The dish is finished with fresh dill and lemon juice, seasoning with salt and pepper to brighten the flavor. The tomato paste contributes subtle sweetness and depth without overpowering the delicate spinach. Its texture is tender, with individual grains of rice infused with spinach flavor. This dish complements heavier mains or can be eaten on its own for a nutritious, veggie-forward meal.
