  • 1 English cucumber sliced into quarter-moons, medium
  • 1 bell pepper seeded and chopped, yellow or orange
  • ½ cup kalamata olives sliced
  • 4 ounces feta cheese cut into ½ inch cubes or crumbled

Vinaigrette:

  • 3 tablespoon extra-virgin olive oil
  • 1 lemon juiced, large
  • 2 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 garlic minced, cloves
  • 1 teaspoon oregano dried
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
