													This Greek Spiralized Cucumber Salad features cucumber noodles for a sassy spiralized salad that's refreshing and delicious!

                                Ingredients
- 1 English cucumber
 - 2 TBSP hummus - any flavor!
 - ¼ cup crumbled feta
 - 1 cup chopped tomatoes (cherry, roma, grape, etc...)
 - 1 cup fresh micro greens
 - ¼ cup sliced red onion, or to taste
 
TASTY EXTRAS:
- fresh lemon wedges
 - Pepperoncini peppers
 - sliced olives
 - fresh chopped parsley
 
LEMON DRESSING:
- ¼ cup lemon juice (approx 2 lemons)
 - ¼ cup quality olive oil
 - 1 TBSP pure maple syrup (honey works too!)
 - 1 tsp Dijon mustard
 - ½ tsp minced garlic
 - 1/8-1/4 tsp sea salt
 - ⅛ tsp black pepper
 
GREEK DRESSING:
- ¼ cup extra virgin olive oil
 - 2 TBSP red wine vinegar
 - 1 TBSP Dijon mustard
 - ½ tsp dried parsley (or 1 tsp fresh)
 - ½ tsp garlic powder
 - ¼ tsp dried oregano
 - ¼ tsp dried basil
 - ⅛ tsp salt
 - ⅛ tsp black pepper
 
Instructions
- Choose your favorite dressing from above and combine ingredients in a mason jar. Pop on the lid, shake, and set aside.
 - Using a spiralizer or veggie peeler curl one english cucumber into noodles. I love the skin on English cucumbers and always leave mine on, but feel free to peel your cuke if you prefer!
 - Divide between two bowls (or serve in one large bowl) and top with tomatoes, feta, hummus, red onion, and all the extra veggies your heart desires.
 - Shake dressing again before serving and dive in!
