Greek Tomato Rice (Ntomatorizo) Vegan, Gluten & Dairy-Free

Greek Tomato Rice (Ntomatorizo) is a baked rice dish flavored with tomato paste, grated tomato, and aromatic spices such as allspice, cloves, and bay leaf. The rice absorbs the rich tomato broth while baking, resulting in a tender texture with subtle warm spice notes. It's a comforting vegan dish that serves well as a side or light main.

Description

The recipe for Greek Tomato Rice calls for sautéing onion and garlic with whole spices including allspice, cloves, and bay leaves to build fragrant layers, then stirring in double-concentrated tomato paste and grated fresh tomato. After adding water or vegetable stock along with sugar, salt, and pepper, the tomato broth is poured over parboiled long-grain rice in a baking dish. Baking allows the rice to cook evenly while absorbing the flavors, developing a soft but separate grain texture.

The use of oven baking rather than stovetop simmering enhances the controlled cooking process and prevents rice from sticking while blending flavors thoroughly. The warm aromatic spices provide depth without overwhelming the tomato base, making the dish balanced and subtle in flavor. It pairs well with a variety of main dishes or can be enjoyed on its own for a simple, satisfying vegan meal.
