Greek yogurt banana bread

This Greek yogurt banana bread uses ripe bananas and Greek yogurt for moistness and a tender crumb. The batter combines mashed bananas with Greek yogurt, canola oil, eggs, and dark brown sugar, along with warm cinnamon and vanilla. Baking until a toothpick comes out clean yields a golden loaf with a subtle sweetness balanced by cinnamon and a gentle tang from the yogurt.

Description

Greek yogurt banana bread starts by mashing ripe bananas and whisking them with Greek yogurt, oil, eggs, vanilla, and dark brown sugar for a flavorful wet base. The dry ingredients—flour, baking powder, soda, salt, and cinnamon—are sifted together and gently folded into the wet mix. Baking the batter in a lined, greased loaf pan at 180°C results in a golden brown bread with a moist, tender crumb and just enough sweetness from the brown sugar.

The bread has a soft texture with warm notes from the cinnamon and the tanginess from Greek yogurt complements the sweetness of the bananas. It’s ideal for breakfast or as a snack, easy to slice and enjoy plain or with a spread.

The instructions recommend cooling completely before slicing to ensure a clean cut. The use of Greek yogurt adds moisture and a slight tang, making this banana bread distinctive compared to versions using only butter or oil.
