  • 1/3 cup Parmigiano Reggiano cheese grated
  • 1/4 cup lemon juice fresh
  • 1 garlic small clove
  • 1/2 tbsp Dijon mustard
  • 2 anchovy fillet
  • 1 tbsp extra virgin olive oil
  • 5 tbsp Greek yogurt fat free

Instructions

  1. In the bowl of a food processor add the cheese, the lemon juice, garlic clove, mustard and the anchovies.
  2. Turn the machine on and let it run for 15 to 20 seconds.
  3. Add the oil and yogurt and let the machine run for another 15 seconds.

Notes

  • Refrigerate the dressing for up to 4 days to maintain freshness.
  • Anchovy paste can replace fillets at a ratio of 1 anchovy fillet to 1/2 teaspoon paste.
  • If anchovies are not desired, they can be omitted, but they contribute essential umami flavor.
