Description
The dressing combines grated Parmigiano Reggiano cheese with fresh lemon juice, a small garlic clove, Dijon mustard, and anchovy fillets processed together to create a flavorful base. Extra virgin olive oil and fat-free Greek yogurt are then added to emulsify and enrich the dressing, giving it a creamy texture and tangy taste reminiscent of classic Caesar dressing but lighter due to the yogurt.
Anchovies provide umami and a subtle saltiness crucial for the authentic Caesar flavor, though they can be omitted according to taste. The lemon juice brightens the dressing, while the mustard helps bind the ingredients. This dressing works well when tossed with crisp romaine lettuce and croutons.
It can be stored refrigerated for up to four days, making it a good option for preparing in advance. Using anchovy paste as a substitute for fillets is possible, adjusting the amount accordingly.
Ingredients
- 1/3 cup Parmigiano Reggiano cheese grated
- 1/4 cup lemon juice fresh
- 1 garlic small clove
- 1/2 tbsp Dijon mustard
- 2 anchovy fillet
- 1 tbsp extra virgin olive oil
- 5 tbsp Greek yogurt fat free
Instructions
- In the bowl of a food processor add the cheese, the lemon juice, garlic clove, mustard and the anchovies.
- Turn the machine on and let it run for 15 to 20 seconds.
- Add the oil and yogurt and let the machine run for another 15 seconds.
Notes
- Refrigerate the dressing for up to 4 days to maintain freshness.
- Anchovy paste can replace fillets at a ratio of 1 anchovy fillet to 1/2 teaspoon paste.
- If anchovies are not desired, they can be omitted, but they contribute essential umami flavor.
