Greek Yogurt Flaky Pie Crust

This Greek Yogurt Flaky Pie Crust combines cold butter with full-fat Greek yogurt to create a tender, flaky dough suitable for both pies and cookies. The interplay of creamy yogurt and butter yields a crust with a light texture and slight tang, making it adaptable for sweet baked goods such as cinnamon-sugar cookies. Due to its simple ingredients and method, it's a practical choice for bakers seeking a pastry crust without relying solely on fat.

Description

The Greek Yogurt Flaky Pie Crust recipe uses all-purpose flour, cold butter, a pinch of salt, and full-fat Greek yogurt to achieve a well-integrated dough that develops flakiness and tenderness once baked. The method involves mixing the flour and sugar with butter until coarse crumbs form before adding the yogurt to bind the dough. After resting the chilled dough, it can be rolled out and baked to golden perfection. An example provided is making cinnamon cookies by rolling the dough thicker than 1/8 inch, cutting into shapes or strips, sprinkling with cinnamon sugar, and baking until golden and cooled. This crust's versatility lets it be used beyond pies, suitable for cookie bases or tart shells where a tender, crumbly texture is desired.

Servings
  • 1 cup all-purpose flour
  • 1 pinch salt
  • 1 teaspoon granulated sugar
  • 1/2 cup butter cold
  • 1/4 cup Greek yogurt full fat

*I use salted butter, but if you use unsalted then add 1/4 teaspoon of salt instead of a pinch.

Instructions

  1. For this recipe you can use either a food processor, a stand up mixer with the flat beater or by hand using a fork.
  2. In the bowl whisk together the flour and sugar, then add the butter and either pulse, mix or stir until you have coarse crumbs.
  3. Add the greek yogurt and again pulse, mix or combine with a fork until mixture is almost combined.
  4. Move the dough to a flat very lightly floured flat surface and gently knead to form a smooth ball, wrap the dough in plastic and refrigerate 1-24 hours.

HOW TO MAKE CINNAMON COOKIES

  1. Pre-heat oven to 350F (180C). Line 1-2 cookie sheets with parchment paper.
  2. In a jar mix or shake 1/4 cup granulated sugar and 1/2 tablespoon of ground cinnamon.
  3. Remove the dough from the fridge, roll it a little thicker than 1/8 inch thickness and either cut out or cut strips. Place cut outs on a prepared cookie sheet sprinkle with cinnamon sugar and bake for approximately 10 minutes or until golden. Let cool before serving.
