Greek Zucchini Fritters With Feta

Greek Zucchini Fritters blend grated zucchini with fresh herbs like mint, basil, dill, crumbled feta cheese, and lemon zest, bound together with eggs and flour. Pan-fried until golden and crisp on the outside, they have a tender, moist interior. Flavored with cumin, coriander, and red pepper flakes, these fritters offer a balance of savory, herbaceous, and mildly spicy notes. They work well as a warm appetizer or side dish and can be served with tzatziki or extra red pepper flakes for added flavor.

Description

Greek Zucchini Fritters with Feta incorporate shredded zucchini mixed with scallions, aromatic herbs (mint, basil, dill), crumbled feta cheese, and lemon zest for bright, fresh flavors. Eggs and flour bind the ingredients to form a batter that is seasoned with cumin, coriander, red pepper flakes, salt, and black pepper. This mix is formed into patties and fried in olive oil until each side develops a golden, crisp exterior.

The fritters have a contrast between the crispy fried surface and the tender, moist interior filled with the savory feta and fresh herb notes. The presence of lemon zest adds brightness, while the spices provide warmth and depth. Cooking in olive oil keeps the flavor authentic and enhances the texture without overpowering the ingredients.

These fritters are versatile for serving as an appetizer or a side alongside dips like tzatziki. Adding extras such as sweet corn can introduce texture variation. The recipe suggests using olive oil for frying and offers flexibility in using yellow squash or zucchini.
