Green Bean Bundles
Description
This recipe assembles bundles of 6-10 fresh green beans wrapped tightly in a single slice of thin-cut bacon. The bundles are topped with melted butter, brown sugar, and garlic salt before baking. The green beans are briefly microwaved to tenderize before wrapping, ensuring a crisp yet soft vegetable inside the bacon’s crisp edges. The brown sugar caramelizes on the bacon surface, lending sweetness to the savory bacon and garlic seasoning.
Baking at 350°F for 18-20 minutes crisps the bacon and warms the bundles through. Broiling briefly on both sides intensifies the crispness of the bacon wrapping if desired. These bundles complement a variety of main dishes, offering a flavorful vegetable option with protein and a touch of sweetness from the sugar glaze.
Preparation can be partially done ahead by assembling bundles and refrigerating them before baking. Leftovers keep for a few days refrigerated and can be reheated in a pan over medium heat to retain texture without drying out.
